Cabernet Sauvignon 65% Grenache 25% Carignan 10%
The bunches of cabernet aren't destemmed and are vinified at a medium temperature as rapidly as possible using only natural yeasts. The grenache and carignan are vinified separately and are destemmed to avoid any harshness of tannins. Once combined, ageing takes place in curve and bottle. My aim with Liverna is to balance the fullness of flavour with a touch of fruit and satisfying length.
